Mangoes are particularly rich in beta-carotene, which has a positive effect on your skin, eyesight and mucous membranes and also strengthens the immune system.
They also contain vitamins C, E and B. Due to their very low acidity, mangos are particularly easy to digest and stimulate your metabolism.

Ingredients

Porridge Base:

50g (½ cup) rolled oats or quick oats (The porridge will be creamier with quick oats and will have more texture with rolled oats. But you can also mix them.) 

120ml (½ cup) unsweetened coconut milk, milk of choice or water

160g (1 1/4 cups) mango pieces

1 passion fruit

1 tsp rice syrup or maple syrup (optional)

½ tsp vanilla extract (optional) 

Toppings:

1½ tbsp mango pieces

1 tsp coconut flakes

½ passion fruit 

½ tsp chia seeds

 

Instructions

Cut a passion-fruit in half and scrape the pulp out. Prepare the passion fruit pulp and the mango pieces.

Put the oats and the coconut milk in a pot and let everything simmer at medium heat until the consistency is thick.

Take a second pot and put the mango pieces and the pulp of the passion fruit into it. Add about 30 ml of water and optionally the vanilla extract and let the mixture simmer until it becomes a puree’s consistency.

Add the mango passion fruit puree to your porridge and stir everything until you have a creamy texture. Add a little bit of water or milk if the consistency is too thick. If the oatmeal is not sweet enough, add some rice syrup or other sweetener.

Note: You can also use honey if you have nothing else at home. However, please note that honey loses quality when heated over 40 degrees as it is susceptible to heat. When heated, some ingredients, such as some enzymes, get lost. So add the honey only after heating.

Fill the porridge in a bowl and decorate it with mango pieces, passion fruit, coconut flakes and chia seeds.
